The Winemaking Process

The winemaking of Hormos follows a precise process as well as a rigorous set of quality controls in all its phases.

  • The vines

In order to make a wine of exceptional characteristics, the yield should be below 2,5 kg per stock. Using pruning leaves a load of low yolks, that helps clarify and does not surpass above 6.500 kg. per hectar.
The right momet to conduct the grape harvest is based on grade of the grapes as well as the degree of substance concentration, which are key to determine the quality of the wine such as the acidity, poliphenols, etc.

  • Fermentation

The alcohol fermentation is done in stainless steel deposits in a process that is usually conducted over fifteen days. During that time, the temperature is tightly controlled and it is not allowed to rise above 27 degrees Celsius. The optimal maturity of the grape and its alcoholic content around 14%, allows for the easy extraction of the phenol substances, which are the ones that provide the wine with its complex structure.

  • Aging in Oak Barrels

Following the alcohol fermentation, the malolactica fermentation of the wine takes place in carefully selected French and American oak barrels where wine rests for a minimum period of a year and a half.
When the right assembly between the wine and the wood has taken place, the wine is transferred to stainless steel, where wine rests and decants until it is bottled.

  • Bottling Process

The bottling process of the wine is conducted in state of the art facilities. The strict quality controls and rigorous aseptic levels guarantee that Hormos is bottled in the best possible conditions for its perfect preservation.

  • Bottling

In climate-control facilities, where temperature and humidity are kept at the desired levels, Hormos completes its last stage by resting a minimum of six months.
